Baguette de Paris

A have found my little slice of heaven, literally. I stumbled across this recipe at Cook It Up Paleo and at first I was weary because:

  1. It contained active yeast
  2. It had a lot of almond flour (which I tend to try to stray away from because I eat soooo many almonds while snacking)

So, these two points were pretty big drawbacks for me, but after reading through the article it explains that yeast is okay for paleos. Naturally, this is a personal choice, but I threw in the towel and decided to make the bread because it looked too flippin’ good to pass up.

Crusty Bread

Via Cook It Up Paleo

Ingredients:

  • 6 Tbs lukewarm water
  • 1 Tbs Maple Syrup
  • 2 Tbs Extra Virgin Olive Oil
  • 2 tsp Active Dry Yeast
  • 1 Egg
  • 2.5 cups of Almond Flour
  • 1.5 cups of Tapioca Flour
  • 1/2 tsp of Sea Salt
  • 1 Egg White, beaten

Instructions:

  1. Preheat the oven to 375, grease medium sized cookie sheet with oil
  2. Combine water with honey/maple syrup and oil. Add the yeast and let it sit a minute or so
  3. Whisk in the egg
  4. Stir in the flours and salt
  5. Form a baguette shape on the baking sheet and brush with beaten egg white
  6. Make a few slashes on the top of the bread with a knife
  7. Bake 25-30 minutes, or until golden brown
  8. Let cool completely before slicing
