Cinnamon Crunch Popovers

These are an interesting experiment and luckily, they came out pretty darn good! Honestly, they were exploding in the oven and I thought they were gonna be horrible, but the flavor is pretty yummy. Word to the wise, keep them in the fridge and don’t heat them back up because they will fall apart. Eat them out of the fridge and the have the consistency of an old fashion doughnut. Oh yea.. you heard me OLD FASHION white donut with chocolate frosting… yea, that’s the consistency. Hmmm, now I know my next doughnut endeavors! watch out for the old fashion.

Cinnamon Crunch Popovers


  • 1/4 cup coconut flour
  • 1/4 cup butter, liquified
  • 2 eggs, at room temperature
  • 1 Tbs. apple butter
  • 3 TBS erythritol OR 1 TBS of honey/maple syrup
  • ½ tsp. baking soda
  • 1 TBS. apple cider vinegar


  • 2 tablespoons ground cinnamon
  • 4 tablespoons honey
  • 1/4 cup chopped walnuts (optional; or other nut)


  1. Preheat oven to 350 degrees
  2. Combine all the above ingredients besides the toppings,
  3. Place ingredients in a donut pan or muffin pan ( I used a donut pan, but I’m thinking it would probably work better in a muffin pan!)
  4. Combine all the topping ingredients and spoon little by little into the batter that’s in the pan
  5. Take a straw/knife (whatever you have that makes sense) and stir the topping into the batter
  6. Place in the oven and bake for about 30 minutes, or until a toothpick comes out smooth

Note: So, mine were EXPLODING in the oven, so I made the baking soda only ½ tsp., versus what I used 1 tsp. If you want that “muffin top” look, I would use 1 tsp. of baking soda, just be sure to watch them. They have the consistency of a soft muffin!
