Fudgy Plantain Brownies

So I had two VERY ripe plantains sitting in my kitchen and I had noooo idea what to do with them… I did some thinking and I decided to give a whack at some plantain brownies. Honestly, THESE ARE DELICIOUS. Even better? They are so flippin’ easy. You literally put everything in a blender and TA-DA you have this moist, chocolate fudgy goodness. Explosion on your taste buds. Boom.

Feel free to add anything you like to this base recipe. I added some chocolate chunks on top! Next time I may try some pecans, maybe some dried blueberries??? Go ahead and play.

Plantain Brownies

Fudgy Plantain Brownies


  • 2 ripe (yellow) plantains, peeled and sliced into quarters
  • 2 eggs
  • ¼ cup butter
  • 3/4 cup of erythritol
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1 cup of chocolate chips


  1. Preheat oven to 350°F
  2. Place all the ingredients, except the chocolate chips, in a high powered blender or food processor
  3. Blend until well incorporated
  4. Place the chocolate chips in a double boiler and melt
  5. Place melted chocolate into blender and blend well with other ingredients
  6. Place mixture in a 9X12 baking dish or a pie dish (if you put in the pie dish, baking time is MUCH longer)
  7. If baking in the 9X12 dish, bake for 30-35 min / If baking in the pie dish bake for 45-50 min
  8. Take out of the oven and allow to cool completely
